Salad for breakfast? Absolutely!
It's surprisingly good and starts the day off with a great combination of protein, carbs, and light greens.
It's simple:
Ingredients:
romaine lettuce
carrot
cottage cheese
walnuts
raisins (a generous amount :-)
ground flax (about a tsp)
In a bowl, place romaine, ripped into bite-sized pieces.
Shave on the carrot.
Dollop on the cottage cheese.
Toss in the raisins.
Sprinkle on the walnuts.
Lightly toss on the flax.
Enjoy!
