cooking in a pot...it's not that hard, right?

I used to cook in a pot...a lot. There's something about flavor that happens in a pot that you can't get anywhere else.

By the way, ignore that the word, pot, has a bad name. It's a large container that goes in the oven. (Maybe we can come up with another name; I'll have to think on that one...)

Here's a meal that's amazing...and cooked in a pot in the oven.

It was a HUGE hit last night.

Place in a pot....layered, from bottom to top...
Lean pork (or any other lean meat)
ringed onions
carrots
pineapple
carrots
broccoli

seasoning to taste

Cover. Place in the oven. Cook till soft.
(Ours was in over an hour...but be careful not to let it get dry; add a bit of water, as needed.)

The best part of the meal is when you serve it up, and the ingredients are so tender, they fall apart together in the big spoon as you mound their deliciousness onto the waiting plate.

I need to cook in a pot more often.

To enjoying eating clean,
Erin
