I'm constantly amazed at how we all tend to be lazy. It's inborn. Truly. And, so often, if we simply took five minutes, something fabulous could--and would--grace our worlds.
Take oatmeal, for instance.
It's plain. In fact, it's really plain. But take five simple minutes to toss in apple chunks, blueberries, and toasted almonds...grind up a little flax seed in the coffee grinder and throw it in...and, Ta Da! An amazingly-good, guilt-free breakfast.
We all know how great oatmeal is for us. But we avoid taking the few minutes to make it. Today, I vowed to move past the five-minute laziness-inclination and make some. I'm glad I did. I could have missed a really enjoyable breakfast. (I know, it doesn't take much to make me happy :-) But you know, it's taking time to enjoy the simple pleasures that makes our day perk up, isn't it?)
Take five. It's not hard. Throw in extras. Snaz it up. Whether it's oatmeal or a salad...on a baked or sweet potato... on your grilled chicken or tuna...Make those taste buds dance. It's worth it.
With everything in you, make today amazing -- eating clean, feeling good, and looking really good, from the inside out.

PS. With kids, nothing is ever boring. My son, Ben, wanted the oatmeal purple, so we put the blueberries--and all of the extras--in the pot, while it cooked. The official verdict: "Mmmmm....purple tastes really good."
I'm trying this recipe: Sweet Breakfast Quinoa

1 cup red quinoa, rinsed
2 cups water
1 tablespoon extra-virgin olive oil
1/4 cup slivered almonds
1/2 cup dried apricots, cut into 1/2-inch pieces
2 tablespoons pure maple syrup (I'm substituting honey)
1/2 teaspoon finely grated orange zest
1/2 teaspoon cinnamon
1/4 cup fresh ricotta
1. In a medium skillet, heat the olive oil. Add the almonds and cook over moderate heat, stirring a few times, until golden brown, about 2 minutes. Add the apricots, maple syrup, orange zest and cinnamon and stir well until heated through.
2. Add cooked quinoa to the skillet - top a portion with a tablespoon of fresh ricotta and serve!
