Need a simple and "clean" meal fast? Try this...

While everyone else had a gluten-packed meal tonight, I triumphantly ate clean with what was in the cupboard. It took only a few minutes to put together this simple dinner:

  • Bake one white sweet potato (or microwave for 6-7 minutes in a paper towel, after poking holes with a fork); dribble tomato soup over the top. The white sweet potato is a cool change from the regular version, kind of in between a white potato and an orange sweet potato.
  • Then, on the side, mix carrot stick slivers with albacore tuna, with BBQ sauce dribbled over the top...

Eat with the tuna/carrots on the potato, or eat as two dishes side by side.

Simple. Fast. Clean. Delicious!

My body feels good. I feel good. The eat-clean gluten-free life isn't hard, and the results are worth it.
