The 21-Day Eat Clean Challenge: DAY 1
What's your #1 challenge for eating clean? For me, it's the problem of eating whatever's around. You know what I mean: Something's laying out on the pantry shelf calling my name...and no matter how much I try not to listen ("la-la-la, I can't hear you!")--it doesn't work.
The fix: Plan what to eat and eat what you plan.
Planning doesn't have to be elaborate. Make it simple: Have the "stuff" bought and ready, stocked in your freezer and frig. Here's something that I threw together for lunch--and it was DELICIOUS!
Sesame Green Beans & Red Pepper Stir Fry
* Fry two egg whites in a dab of olive oil (a fried egg without the yolk) and set aside.
* Stir fry these ingredients:
a good-sized serving of fresh or frozen green beans
1/4 red pepper, sliced and cut
a liberal amount of sesame seeds
~1 1/2 T. olive oil
dash of garlic pepper
Your "side": a thin slice of whole grain toast. For those needing gluten free (like me), have a slice of gluten free bread or six round rice crackers.
Mound the stir fried veggies on the plate. Place your egg whites over the top. Add a large dab of organic Hummus on the top--and ENJOY!
Oh, and for "dessert," munch a wedge of orange or grapefruit. I opted for the grapefruit today.
This week, go to the store and get the good stuff--and stock up. Because the secret to this lunch was having the ingredients all ready to go. Try stocking green beans, spinach, sweet potato, broccoli...colored peppers, mushrooms, sprouts, and water chestnuts...almonds, walnuts, pumpkin seeds, sunflower seeds, sesame seeds...chicken breast, white tuna, tilapia fillets....Just these ingredients create dozens of meals!
Get it, have it....you're more likely to eat it. Don't get it, don't have it, you won't eat it.
YOU CAN DO THIS. It's not rocket science. It IS planning and doing. We're intelligent people with a passion to be absolutely fit, feeling great, and looking fantastic. Let's do this right and reap the rewards.
